Ingredients

Eggs
Onion dice
Red pepper, juliennes
Green pepper, juliennes
Garlic, chopped
Red chilies, finely chopped
Cumin powder
Harissa or Paprika
Salt
Tomatoes, chopped
Tomato paste
Olive oil

Preparation

  1. Heat olive oil in a pan and sauté onion, garlic, chili, red and green peppers.
  2. Add tomato paste and Fresh tomatoes.
  3. Sprinkle cumin, paprika and salt.
  4. Once it is cooked, break eggs on it and cover with lid.
  5. Cook it on top of the heat or bake it is oven.
  6. Once eggs are cooked, drizzle some olive oil and serve.
