| Eggs | ||
| Onion dice | ||
| Red pepper, juliennes | ||
| Green pepper, juliennes | ||
| Garlic, chopped | ||
| Red chilies, finely chopped | ||
| Cumin powder | ||
| Harissa or Paprika | ||
| Salt | ||
| Tomatoes, chopped | ||
| Tomato paste | ||
| Olive oil |
Preparation
- Heat olive oil in a pan and sauté onion, garlic, chili, red and green peppers.
- Add tomato paste and Fresh tomatoes.
- Sprinkle cumin, paprika and salt.
- Once it is cooked, break eggs on it and cover with lid.
- Cook it on top of the heat or bake it is oven.
- Once eggs are cooked, drizzle some olive oil and serve.
