Ingredients
Eggs | ||
Onion dice | ||
Red pepper, juliennes | ||
Green pepper, juliennes | ||
Garlic, chopped | ||
Red chilies, finely chopped | ||
Cumin powder | ||
Harissa or Paprika | ||
Salt | ||
Tomatoes, chopped | ||
Tomato paste | ||
Olive oil |
Preparation
- Heat olive oil in a pan and sauté onion, garlic, chili, red and green peppers.
- Add tomato paste and Fresh tomatoes.
- Sprinkle cumin, paprika and salt.
- Once it is cooked, break eggs on it and cover with lid.
- Cook it on top of the heat or bake it is oven.
- Once eggs are cooked, drizzle some olive oil and serve.
