Preparation
- Wash parsley bunches and mint thoroughly.
- Chop them roughly with very sharp knife to avoid mashing them.
- Rinse the bulgur in a strainer under a cold tap running water.
- Just before finishing, mix bulgur with lemon juice and chopped tomato together so that it softens.
- Just before serving mix all ingredients together.
- Season and finish with extra virgin olive oil.
