Ingredients

Chickpeas
Garlic clove mash
Tahina paste
Lemon salt
Baking soda
Salt
Paprika
Extra virgin olive oil
Parsley chopped
Corn oil
Green chilies chopped
Lemon juice
Fava beans boiled
Cumin powder

Preparation

  1. Soak the chickpeas over night.
  2. Drain them and put them in a pot with enough water to boil.
  3. Add little baking soda to it.
  4. Cook until they are soft.
  5. Once cooked drain them thoroughly.
  6. Rinse them under running water until the skins loosen and fall off.
  7. Puree the chickpeas in a blender (Robot coupe).
  8. Add ice cold water, garlic mash, lemon salt and lemon juice.
  9. Mix them till it becomes smooth and creamy.
  10. Add Tahina sauce in the end and fold it slowly.
  11. Add chopped parsley and green chilies.
  12. Garnish with fava beans, paprika and parsley.
  13. Sprinkle cumin powder.
  14. Drizzle olive oil on it.
