Preparation
- Take medium sized pumpkin and cut them in big pieces.
- Prick the skin with small knife or metal skewer.
- Pumpkin can be roasted in oven on perforated trays.
- It can also be covered in aluminum foil, pricked and Chargrilled.
- In both method, it should be cooked till moisture evaporates.
- Remove the skin and let it dry little more.
- Soak pistachios in water to make it soft. Drain and crush with mortar.
- Tamper pumpkin seeds and crush it.
- Put pumpkin, garlic mash, pistachio, lemon juice, little chili paste and seasoning in blender.
- Blend till smooth consistency.
- Fold in tahina and mayonnaise in the mixture.
- Finish olive oil, crushed pumpkin seeds and mint.
