Ingredients

Pumpkin
Tahina sauce
Garlic mash
Pistachio
Mayonnaise
Dry pumpkin seeds
Lemon juice
Chili paste
Olive oil
Salt
Pepper
Mint

Preparation

  1. Take medium sized pumpkin and cut them in big pieces.
  2. Prick the skin with small knife or metal skewer.
  3. Pumpkin can be roasted in oven on perforated trays.
  4. It can also be covered in aluminum foil, pricked and Chargrilled.
  5. In both method, it should be cooked till moisture evaporates.
  6. Remove the skin and let it dry little more.
  7. Soak pistachios in water to make it soft. Drain and crush with mortar.
  8. Tamper pumpkin seeds and crush it.
  9. Put pumpkin, garlic mash, pistachio, lemon juice, little chili paste and seasoning in blender.
  10. Blend till smooth consistency.
  11. Fold in tahina and mayonnaise in the mixture.
  12. Finish olive oil, crushed pumpkin seeds and mint.
