Notes

Ingredients

Chickpeas
Garlic clove, mash
Tahina sauce
Lemon salt
Baking powder
Salt
Paprika
EVOO
Parsley sprig

Preparation

  1. Soak the Chickpeas over night.
  2. Drain them and put them in a pot with enough water to boil.
  3. Add little baking soda to it.
  4. Cook until they are soft.
  5. Once cooked drain them thoroughly.
  6. Rinse them under running water until the skins loosen and fall off.
  7. Puree the chickpeas in a blender (Robot coupe).
  8. Add ice, cold water, garlic mash, lemon salt and lemon juice.
  9. Mix them until it becomes smooth and creamy.
  10. Add Tahina sauce in the end and fold it slowly.
  11. Finish with extra virgin olive oil.
  12. Garnish with whole cooked chickpeas, paprika and parsley.
