Preparation
- Soak the Chickpeas over night.
- Drain them and put them in a pot with enough water to boil.
- Add little baking soda to it.
- Cook until they are soft.
- Once cooked drain them thoroughly.
- Rinse them under running water until the skins loosen and fall off.
- Puree the chickpeas in a blender (Robot coupe).
- Add ice, cold water, garlic mash, lemon salt and lemon juice.
- Mix them until it becomes smooth and creamy.
- Add Tahina sauce in the end and fold it slowly.
- Finish with extra virgin olive oil.
- Garnish with whole cooked chickpeas, paprika and parsley.
