Whole Roasted Stuffed Sardines

Ingredients

Sardines, cleaned
Bulgur, steamed
Chermoula spice
Garlic clove
Cumin
Coriander seeds
Paprika
Salt
Peppercorn
Lemon juice
Fresh coriander
Extra virgin olive oil

Preparation

  1. Wash sardines, give a butterfly cut from belly side.
  2. Open and clean it.
  3. Chermoula spice mixture.
  4. Combine all the ingredients and mortar it to smooth paste.
  5. Add some steamed bulgur to the mixture and leave aside.
  6. After some time mash it to thick mixture.
  7. Stuff this mixture.
  8. Place butterflied sardine, put the chermoula spice mixture in.
  9. Fold the fish from tail towards head part.
  10. Insert with bamboo stick to close it.
  11. On a tray spread a butter paper, assemble the fish.
  12. Drizzle with olive oil, lemon juice and sprinkle sea salt.
  13. Bake in a preheated oven till its cooked.
  14. Finish with roast tray juice.
