Ingredients

Lamb Cutlets
MARINADE
Chermoula spice
Garlic clove
Cumin
Coriander seeds
Paprika
Salt
Peppercorn
Olive oil
Lemon juice
Fresh coriander
Tomato (1/4 cut)
Za'atar leaves
Green and black olive
Onion slices

Preparation

Chermoula Marinade
  1. Combine all the ingredients and mortar it to smooth paste.
  2. Marinate the lamb cutlets.
Lamb
  1. Sear on a flat top grill.
  2. Cook and finish in the preheated oven.
  3. Heat olive oil in a pan, sauté onion, toss tomato, olives and za'atar in it.
  4. Season and serve with lamb cutlets.
