Ingredients

Lamb, minced
Parsley, chopped
Onion, grated and squeezed
Black pepper
Cumin powder
Red chili chopped/Harissa
Extra virgin olive oil
Garlic, chopped
Lamb fat, minced
Salt

Preparation

  1. Combine lamb mince, lamb fat mince and cumin.
  2. Kneed by hand until thoroughly mixed and smooth.
  3. Add parsley, chili, onion, garlic and seasoning.
  4. Make balls and dress on metal skewers.
  5. Keep in the chiller for some time to set.
  6. Grill on charcoal BBQ unit.
  7. Remove from the skewer and serve.
  8. It can be served with rice or rocca salad
