Seasalt Baked Local Seabass

Ingredients

Local Sea bass-Cleaned
Rock salt coarse
Coriander seeds roasted and crushed
Garlic clove smashed
Black pepper
Lemon salt/juice
Potato
Coriander chopped
Cumin powder
Extra virgin olive oil
Garlic mash
Onion chopped
Salt
Green bean
Tahini sauce
Sesame seed black and white

Preparation

Fish
  1. Clean the fish, keep the head and tail in-tacked.
  2. Dry in completely.
  3. In a bowl make mixture with Coarsed salt, Coriander seeds, garlic clove, black pepper and touch of lemon salt.
  4. In a baking tray put rock salt on the bottom.
  5. Cover the fish with the mixture and place on top of the rock salt.
  6. Sprinkle with some moisture like water and lemon juice.
  7. Bake it in preheated oven for 15 to 20 minutes.
Potato
  1. Boil the potato, once ready remove the skin.
  2. In a pan heat olive oil, saute onion and garlic.Sprinkle cumin powder.
  3. Add potato and crush with fork.
  4. Add chopped coriander and some olive oil to finish.
Tahini Bean
  1. Boil green bean, toss in olive oil and Tahina sauce.
  2. Sprinkle with black and white sesame seeds.
Assemble Dish
  1. Clear the salt mixture from the fish.
  2. Serve with crushed potato and tahini beans.
